It’s something unexpected. No matter what you have read or heard, it’s the energy of this place that, upon leaving, quietly steals your heart. It’s the epitome of a Cycladic bar.

It feels like being invited into a friend’s courtyard, encouraged to sit on those white steps and mingle until you become part of a happy crowd—even if you’re not a people person… I’m not either…

The Space & Style: Simple, Cycladic, Refined

The space is small. A perfectly ergonomic interior, with bold accents. Right next door is the gift shop, stocked with stunning items—each one designed by Natasa Polyzou, the creative force behind Theosis’s visual concepts.

The bar is housed in a building from 1850—one that truly breathes the history and traditional aesthetic of Ano Syros. The renovation was done with respect, using sustainable materials, lime-based paints, and ceramics—clean, minimalist, yet warm and inviting.

But you probably expect that—especially if you recognize Christos Golfis’ aesthetic from his photography. A former owner of Kouchico, Christos excels at building concepts rich in both aesthetics and experience. He says Theosis wasn’t meant to be just another bar—it was designed so that the soul, the art, and the sensory experience all become part of one unified journey.

And he pulled it off: from architecture to cocktails to gift shop products, everything is tied together under one coherent, thoughtful, and beautifully curated concept.

Theosis’s Cocktail Concept: Philosophy in a Glass

Every season, Theosis crafts a full concept—visuals, menu, mood story—into a new “episode” of collective and personal Theosis, drawing inspiration from mythology.

One earlier concept, “Love Lasts Forever”, was a tribute to the tragic story of Apollo and Hyacinthus. Hyacinthus, a stunning youth, dies from a game-related wound. Apollo, unable to bring him back, turns him into a flower—so his beauty and scent will endure forever. Here, love’s sorrow becomes nature, and nature becomes memory. The myth reminds us that, on our path to Theosis, we may be required to sacrifice what we love most.

Another menu, “The Leftovers of the Lovers”, drew from the psychological allegory of Eros and Psyche. Psyche, a mortal beauty envied by Aphrodite, was meant to be cursed—only for Eros to fall in love with her instead. Psyche’s beauty needs Eros to be complete. And Eros, son of divine beauty, remains unfinished without Psyche’s human soul.

This year’s cocktail list, “Reshaping Souls”, is inspired by the myth of Theseus and Ariadne. It symbolizes abandonment, purification, and the rebuilding of the soul. The flavors and ingredients form a bridge between ancient myth and the unique terroir of the Aegean.

Every cocktail—from Hedone to Apatheia and Catharsis—represents a stage of this inner journey, a translation of emotion into taste.

Behind it all are Nikos Sotiropoulos and Christos Golfis. Nikos’s background in anthropology and archaeology informs the storytelling within each drink. As he explains:

“This is the result of over ten years of thought. I became interested in alcohol’s social role and its impact on humanity through the ages. Studying history and archaeology, I looked at how bars in Athens evolved. Theosis grew from that research—bringing together the art of the Cycladic civilization and modern cocktail culture inside a traditional village.”

The herbs, fruits, and spirits at Theosis are not just ingredients. They’re bearers of memory, little messengers of the Aegean:

“Earth, air, and people shape our cultural identity. In our drinks, we use ingredients from Syros and the Cyclades to build flavors that evoke the islands’ microclimate—a way to journey across the timeless Aegean in every sip.”

At Theosis, a cocktail is more than a drink—it’s storytelling, philosophy, and aesthetics. It’s a way to remember, to feel, to transform—just like the mythic heroes who inspired every drop.

The Cocktail List

I started with “Ariadne”—a gin-based blend with apple and herbs that delivered freshness with a subtle and balanced tang.

Then came “Nevertheless, I had to offer you that love you were looking for.” A tropical delight with rum, smoked pineapple, and lemongrass—perfect for dedicating to someone special. This cocktail lingers.

“Pothos”, with tequila, raspberry, and bubbles, is refreshingly vibrant; while “Apollo”, combining bourbon, peach, mint, and egg white, is luxuriously creamy.

My standout was “Phthonus”—mezcal, green tea, and celery. Smoky, herbal, just a hint of salt, but perfectly balanced—almost spiritual.

“Apatheia” (dry and bitter) cuts through the sweet and fruity notes. “Hedone”, with vodka, melon, pineapple, and citrus, is summer in a glass. And “Catharsis” truly delivers—like the kind of cocktail you immediately crave again.

You simply can’t leave without buying something. Next to the bar is a small gift shop filled with stunning items—candles, essential oils, clothes, sketches, posters, and notebooks—all infused with the Cycladic vibe in both scent and design.
